Creamy Cashew Cheese

A nice twist on cashew cheese recipes. It can be used as a spread and sauce/gravy.

For Rice and Pasta: In a high speed blender pour in the cashews, onion powder, garlic powder and salt. Pour 6 ounces of the roasted red bell pepper into a measuring cup, add some of the water from the bell peppers, then add a bit more water so that it just barely covers the top of the roasted red bell peppers, then pour into the blender. Blend till creamy. Pour on your favorite pasta or rice or potatoes with a bit of oil (1/8 cup at most). Stir and serve!

For a Cheesy Spread: Simple add 1 or 2 tablespoons of water.

Mash potatoes with about 1/4 cup or so soy milk.

Caramelization Without Oil

What foods to caramelize?
The best food products to caramelize are those with higher amounts of sugar such as:

  • onions
  • beets
  • carrots
  • peppers
  • corn
  • parsnips.

Cut, chop or slice your choice of food product to your preference. Place it into a skillet over medium heat and cover so that it begins to steam. This should take about 15 minutes.

Example with Onions
At this point most of the water from the onions should have evaporated and they have turned translucent.

Now it is time to uncover the skillet and continue cooking until the water is reduced and the onions begin to carmelize. Carmelization begins when the onions begin to change from transulent in color to a carmel color. Keep an eye on your skillet of onions as you do not wish them to burn.

Now you will be able to deglaze the skillet with about 1/2 cup of water when the onions have begun to stick to the bottom of the pan. Note: You will want to do this before they begin to burn. Use a wooden or spatchula of choice to scrape the bottom of the skillet thoroughly until the onions have reached your desire of caramelization.

The finished product will vary but will be golden to darker golden in color through out the onion.
