A nice twist on cashew cheese recipes. It can be used as a spread and sauce/gravy.
Creamy Cashew Cheese

Ingredients
- 1cup raw or roasted cashewsI use roasted many times
- 6ounces roasted red bell pepperstore bought
- 2teaspoons onion powder
- 1teaspoon salt
- 1 teaspoon garlic powder
Recipe Notes
For Rice and Pasta: In a high speed blender pour in the cashews, onion powder, garlic powder and salt. Pour 6 ounces of the roasted red bell pepper into a measuring cup, add some of the water from the bell peppers, then add a bit more water so that it just barely covers the top of the roasted red bell peppers, then pour into the blender. Blend till creamy. Pour on your favorite pasta or rice or potatoes with a bit of oil (1/8 cup at most). Stir and serve!
For a Cheesy Spread: Simple add 1 or 2 tablespoons of water.

- 3ripe bananas
- 1/2cup apple juice
- 1cup pineapplecrushed with unsweetened juice
Instructions
- Combine all ingredients. Whiz until smooth. Delicious over waffles, pancakes, crepes or cereal.

Ingredients
- 1cup grape juice
- 7 dates
- 1cup applesdried
- 1/4-3/4teaspoon orange and/or lemon rindgrated
Instructions
- Soak apples for several hours in grape juice or until soft enough to blend. Blend with dates and rind until smooth.

Great filling for the Banana Pecan Crepes!

Ingredients
- 5-6 bananassliced (or fruit of your choice)
- 3/4 cup pecanschopped
- 1/4-1/2 cup pure maple syrup
Instructions
- Pour some syrup in pan on medium heat. Add pecans. Cook a few minutes. Add bananas. Cook a few minutes more. Fill a crepe with 1/3 cup filling, and roll it up. Top with syrup and pecans.
