Ingredients
- 1cup Quinoadry
- 2cups Liquidwater or broth
- 4mini Red Bell Pepperssliced
- 1large Shallotsliced
- 2 Scallionssliced
- 5 Green Pimento Stuffed Olivessliced
- 2medium to large Tomatoesdiced
- 3-4T Lemon Juice
- 3-4T Extra Virgin Olive Oil
- 3T Fresh MintChiffonade
- 3T Fresh parsleyChiffonade
- Salt to Taste
Recipe Notes
Cooked Quinoa
Rinse. Add water to pot and bring quinoa and water to a boil. Cover and simmer for 20 minutes. Remove from heat and let sit until its cooled off.
Faux Tabouli
Add remaining ingredients, stir well and serve. Or if you prefer allow the salad to macerate, then serve.
